Red Miso or "Akamiso" is miso that has been fermented for a long time. It is much saltier than White Miso and has a stronger flavor.
This is "Rustic Miso", which is most popular in southern Japan. A mainstay of Japanese cuisine with numerous health benefits! Red miso is a "Kome miso" or rice-based miso. It is produced by double fermentation for a period of 12 to 18 months.
What is Miso?
Miso is a traditional vegetable preparation made from fermented rice and soybeans. It continues to ripen after packaging, even at moderate temperatures, and in particular the famous Maillard reaction, responsible for the flavours of many food products, occurs between the sugars and amino acids with which Miso is generously endowed. This ripening is at the origin of the development of Miso's aromas and flavours.

Red Miso fits perfectly into Western cuisine! Its full-bodied flavor is slightly reminiscent of soy sauce, or even the slightly smoky flavor of meat.
An excellent alternative to meat stock, it goes very well with meat and fish marinades and adds life to fried vegetables. The possibilities are endless, and Miso enhances the flavors of your dishes in the same way as a stock, while giving you all the benefits of its properties!
