White Miso or "Shiromiso" is a "young" Miso because it is not very fermented. Very popular in Tokyo, it is the mildest and is recommended for a first taste.
A mainstay of Japanese cuisine with countless health benefits! Its smoothness and creaminess are due to the fact that AROMANDISE white miso is made from dehulled soybeans. It is a "Kome miso", a rice-based miso. It is the result of a 3-week double fermentation.
The light color of White Miso may darken slightly over time as a result of this natural maturation process. This does not affect its freshness or properties.
What is Miso?
Miso is a traditional vegetable preparation made from fermented rice and soybeans. It continues to ripen even after packaging, even at moderate temperatures.
In particular, the famous Maillard reaction, responsible for the flavours of many food products, occurs between the sugars and amino acids with which Miso is generously endowed. This maturation is at the origin of the development of Miso's aromas and flavours.
