Yellow Miso or “Mugi Miso” is a Miso made from barley, without any heat treatment. It is the result of a traditional double fermentation lasting 4 months.
This unpasteurized miso is rich in protein and fiber, with 9 essential amino acids (>3.5g / 100g).

What is Miso?
Miso is a traditional vegetable preparation made from fermented rice and soybeans. It continues to ripen after packaging, even at moderate temperatures. This ripening is at the origin of the development of Miso's aromas and flavors.
