Indian sandalwood, Santalum album, is best known for its aroma, especially that of Mysore. The wood powder and steam-extracted essential oil are used in this recipe. Sandalwood, Santalum spicatum, is a resource with aromas very similar to the traditionally used Indian sandalwood.
